Look at me! 2 posts in 1 day! :D

Ever since I learned how to cook, I was accustomed to cooking enough for 4-6 people and then some!

Now that most days it's just Danny and myself, I still can't figure the measurements out. I know it's silly because it's simple math, but I have yet to master cooking just enough for us 2.

So once I finally got over my cold, guess who gets sick?!

Yep, that's right - the husband.

LOL, And since I'm all better now I was finally able to cook! I made "caldo de res", which is just beef and veggie soup.

Here's what the stove looked like while the soup was simmering:

I used all of my pots! The big pot had 3 steaks in there with a lot of the veggies, the medium pot had one steak and some veggies, and the tiny pot had some vegetables that couldn't fit in the other 2 pots.

This always happens to me when I cook!

I had seriously considered only cooking enough for the night, but then reconsidered and thought about what Danny could eat if he was still feeling sick and so on ....

All in all - I used 4 shank steaks, 3 baking potatoes, about 6 small-medium carrots [one of Danny's least liked vegetables], 2 medium sized sweet yellow onions and a small head of cabbage [another of Danny's least liked vegetables] complete with a side of spanish rice .. served with limes and corn tortillas.

Oh yeah the point of this post! (ref. the title) HAHA - I need a tall stock pot!

Something like this:

Something with a 10-12 quart capacity would be perfect!

But until then, this is what I'll be dealing with.

A whole week!

I know it's been more than a whole week since I've blogged :(

But a lot of that was to blame to the fact that I've been sick for a whole week. I'm just starting to feel like myself again! It started out as a really bad sore throat, which then turned into a sore throat plus a cough, which then escalated into a full  on cold, and then finally just a really weak cough and a lot of congestion.

I hate to be sick especially since it's so darn hot outside. Throughout the year I'll only get sick maybe 3-4 times which I think is pretty good, but then again I'm not a doctor. So for 2011, this makes the 1st time I'm sick.

I was such a lazy sick person last week and now I feel guilty, but that's just the overachiever in me talking.

I didn't go grocery shopping.

I didn't cook dinner.

I didn't wash dishes.

I barely picked up after myself.

I slept a lot.

I would just like to state for the record, no matter how sick I felt I managed to make it to work and stick it out all day everyday. I didn't go to the doctor so I didn't really have a "reason" to miss out and not come in. Just saying' ;-) And I managed to make my 40+ hours at work last week. See overachiever. lol.

But after that not so productive week I'm feeling much, much better.

And now I leave you with a picture of my pooch who I miss oh so much! Hopefully I'll get to drive over and see her this weekend. Love you Bella!!!

Thank you Audrey for sending this to me!

Friday, the 13th ..... OOOoooohhh!! o.O

Hahaha. Creepy?? Nah, not unless you're superstitious.

Well here I am! I haven't really gone anywhere, yet.

This post is going to be a little random and all over the place, so I apologize in advance :)

1. So where have I been?? Well, my computer at work totally crapped out on me. Not in the sense that it crashed and everything on it was lost, but rather it just became extremely, and frustratingly [<-- is that even a word?? lol.] SLOW!!

My boss tried everything he could to make it run faster, but had no luck. Then we did the next best thing and called in a computer technician. Did it help? Heck no! For some weird reason there was 8GB of memory on the computer, and only 3GB's were available. He thinks that the chip must've been ruined which in turn made it run really slow, and it would be really expensive to fix - it would be cheaper to just buy me a new tower.

So did I get a new computer?? NO! The software I use to run payroll will only run on a 32 bit tower.... And all the new, off-the-shelf towers at the stores come in 64-bit. Yes they're better, and probably faster [can you tell I don't know much about computers?? lol. all this technical mumbo jumbo stuck in my head after some repitition of hearing it over, and over .... ] I did get a replacement tower, just not a brand spanking new one. It is way better than the one I had, I noticed a drastic difference from the old one when I began to use it yesterday. A new tower is not going to make me better at my job, and not getting a new one isn't going to make me be a bad employee either. I can rock this job, even if I had to use the old one!! :D

2. I've been feeling under the weather for the past several days. It's not a cold, or the flu .. .I think it's some kind of throat infection. My throat is just irritated. I'm not coughing, not a lot anyway just every once in awhile something I breathe in will rub it the wrong way and I'll cough as a result of that. My sense of taste has gone - everything tastes bland :( and when I salt something, the salt really comes out and then it's all I can taste. I've been feeling really drained of energy, and have had no urge to cook or clean at all.

3. This week flew by really quickly! It seems like just yesterday was Monday. Maybe it's because every, other day I was the county court house trying to renew a registration sticker ... I've had to go back repeatedly because of bumps that have come up. Finally, though we made a break only to go in today and find that the clerk/notary that was on our case wasn't going to make it in to work today :( There's always next week ...

4.

It's almost time for the concert! I just saw a clip his page uploaded on Facebook, and now I'm even more anxious!!!

5. I've stayed late at work everyday. Right now, I'm still here. I'm completely caught up on my work for the week and I'm just waiting on 2 trucks to make it into the yard. One is to be unloaded, the other is going to be loaded up with shredded aluminum.

***EDIT - 5:50PM : Both trucks just showed up - at the same time!! lol. Score! :D

6. I think it's time for some Netflix while I wait!

Tonight is banda night. ...... Mission - "Video Clip" is on! I hope I get a good one :)

I hope everyone has a great Friday Night!!

A week and counting!

It's been exactly 7 days since I've been "under the weather". And while some days have been better than others, this cold is being persistent in lingering around.

I think the biggest problem, is that I haven't taken anything for the infection. I've just been fighting off the symtpoms with DayQuil/Nyquil and cough drops. Danny's going to look into getting me some penicillin soon though, that should do the trick. The most uncomfortable thing I'm dealing with is the lack of taste and smell. We had 2 freshly baked peach pies in the car yesterday, and I couldn't smell a thing! I also could barely taste my food, but that didn't stop me from stuffing my face - I was starving come dinner time.

The peach pies that I made yesterday came out ok, better than what I thought they would. I was struggling with rolling out the pastry dough when it came out, and it always seems to give me trouble when I made the 2 crust recipe v. the 1 crust. Yesterday the dough was too stiff and kinda dry. It kept breaking apart. I think I'm just going to look for a new recipe. The one I use calls for shortening, and I've seen a handful of recipes where they use butter in place of the shortening. It just might be that time to look for a newer one.

Today is going to be a quiet Sunday. I'm still resting up and taking it easy. But come tomorrow, the job-hunt will go back into play. I've decided to just find something, anything. My degreee hasn't helped any, so much for that. Most of it is the location and demand. If we were say in San Antonio or Austin, I don't think it would be this difficult to find a job. So for now, for the time being - I'm just going to try to find something to get through this time being here. We don't plan on staying here more than a year anyway. Here's hoping!

Austin: Mini-Vacay; Thursday (05/07/10)!

Blogger fail.

LOL. I said I'd post 2 days ago and I haven't! :( I'm sorry

But I digress...

On Friday, I may or may not have woken up feeling a little, uh out of it. Or so to speak. So we might've woken up later than expected.

We wanted to eat breakfast and then head down to San Marcos to the outlets and possibly stop at the Riverwalk in San Antonio. I can't even remember the last time we went to the Riverwalk!

That was the original plan.

But we woke up late :(

So we headed to Kerbey Lane - again, only this time we had to pay because they got our order right. lol.
It was also again, very delicious! Danny ordered the omlette I had the day before and I tried another omlette - but I suck, and I didn't take a picture!

Then we were off!

You know I can't remember the last time I'd been to the San Marcos Outlets either!

And man was that one of the hottest days in Texas! Not as bad as where I live - where it's extrememly hot & humid, but man was it hot!

Needless to say, we didn't last very long there. The heat, plus me feeling the way I was feeling . . . not a good mix. We were able to stop at the fossil store to buy my mom her Mother's Day gift, a new purse and a wallet. But remember? I suck! Not a single picture :(

Next we headed out to hunt down an Arby's! I know what you're thinking. Of all the food available why Arby's?! Well it's because we are deprived in the Valley! I think the closest one to us is in San Antonio

So lunch was great! Yummy! That was enough, all I needed to take a nice and long nap!

I slept for pretty much the entire drive home! Which amounts to about 4+1/2 hours! It felt good! :)t

That was pretty much it. Nothing special on Friday. Not even on the food front :( But it was nice to get away from the crazy work routine for a couple of days! Must do that again soon-ish!

A little under the weather . . .

I'm alive! Don't worry. lol. You know, just incase you were.

I've been under the weather for the past week! I don't know what it is about being sick, but when I'm sick - I'm sick for days!

So that's why I haven't posted in awhile. That and I haven't really had much to post about.

However, on Tuesday we did bring home a 50" plasma tv. I can't remember exactly how it happened, but Danny said something about a good deal he'd get [he works at Best Buy] and how good all our stuff would look .... anyway, here it is.

We didn't pay cash for it, don't worry Mom.

Yesterday [Thursday], Danny and I had our final meeting with the pastor. It wasn't really a meeting, it was more of a lets talk about the ceremony! It's all happening really fast now. Back when we set the date, we were all nonchalant about it and thinking "Oh we have plenty of time". That time is almost up! We are 8 days away from the wedding! 8 days.

I hope my sickness is gone soon. I'd hate to be still sick on my wedding day!

My Birthday Weekend

FYI: This is a really long post! So sit tight :)

Sick. I was sick all weekend!

It all began on .... last week. lol. I was coughing and headachy about Wednesday/Thursday - but then on Friday. Friday the day I look forward to all week! I didn't even make it to work. I had to call, well text, in sick! And it was payday! Needless to say I bet my uncle understood that I really must've been quite ill to miss work on payday! So I didn't really worry about feeling guilty that he maybe wouldn't believe that I was truly sick.

Anyway it is really all a head cold. Cough/congestion and snot! Gross right?

It's all still happening right now. But for now, I think the storm has passed. I'm in recovery and looking forward to being completely healed so that I can start working out! I'm seriously lagging on that. And the wedding is less than 3 months away!!!

Ok well this weekend ... I stayed home all day on Friday - sick. I lived on soup and crackers for about 4 days. lol. Thankfully, that's all done with. Especially since the serving size for Ritz crackers is only 5 crackers! And remember: "I lived on soup and crackers for about 4 days"!! Oh the calories :( We stayed in, my dad brought me some caldo de marisco from Casa de Marisco in Weslaco - delicious! And then we all attemted to watch the Bourne Ultimatum. Audrey and I were the only ones that were successful. My dad fell asleep sometime in the first 30 minutes, I'm pretty sure.

Saturday [Birthday Eve]
Woke up and took my time in the morning. Then we got ready and I tagged along with my little sister as she went to spend her mula! lol. She actually bought a laptop! A really pretty one too. Actually I'm using it to type this blog right now. Right this second. Really! And then we ventured off to Old Navy for a bit of shopping. She was successful. I on the other hand could not find anything. Anything on sale anyway. I've become quite the frugal shopper lately. You know since I've got this big 'ol wedding thing coming up. She bought a couple of shirts there and then she took me to lunch at Which-Wich! It was our first time there too. I had the Shrimp Po-Boy and it was delicious!

Then we ventured off to the mall at a second attempt for shopping. And guess what??! NOTHING! We found nothing! Nothing at all! Unbelievable right?! Well I'm not lying, we could've easily bought something, but we would've regretted it the second we paid for it. So we didn't buy anything. Just a coffee. The whole point of going to the mall was to meet up with my Danny because he wanted to buy me a birthday present. And he actually didn't believe me when I said I didn't find anything I wanted! But I was determined to find something I liked enough so that if he were to buy it, I wouldn't feel guilty. So off to scent chips! Oh the things I could be happy with here! I could find something and actually have it have it's own purpose. They have these burner things that have different themes, one in particular:

I could put this in my future kitchen, with all my fat chef stuff :)
And then we saw this one:

Which could also go in my future kitchen, with the scent of guess?? COFFEE! lol.

Well then they also have a whole section of Jim Shore items! All of which I've been turned to thanks to my older sister Christina. Yes it all started with you Tina! And since I've already got my collection going ... guess what I got?! lol.

The Hey Diddle Diddle one is from my Danny and the Little Red Riding Hood one is from Audrey. I've got the Nursrey Ryhme collection going too. With:

Bonnie thrown in.
Anyway the day ended with a trip to Vitamin World and a early birthday dinner with my mom at Chili's complete with a birthday serenade and a molten chocolate cake a'la mode. It was ok.

Sunday [The Day of]
Still sick. It began with a trip to the flea market where I was on the hunt, and very determined I might add, to find some pie plates. Glass pie plates. It seems that a few of mine have disappeared! Ok I know where they are, but I haven't gotten them back yet. And since I had seen a couple of pie plates at the flea market a few weeks back, I was set on buying them there rather than buying identical glass pie plates at say Wal-Mart for what, $8 a piece?! No thank you. I bought 5. Yep, 5 pie plates. And I've been warned, no more pie plates. I got a double serving of that from Audrey, and then Danny later. :) It's ok, I have 6 now. Well 9 if you include the original missing ones!

Then the day commenced with cleaning, dinner prep and darts. The family was here, complete with my mom. My danny, Merced, and my cousin Robert came too! It was pretty fun. Unfortunately, I was still sick and had a cough attack every so often, but I lived.

Merced actually came with a present! I joked and said he must bring a present to come, but he seriously did! He got me a very personalized card which was really sparkly :) and also a Journey CD!

I do not own one. I mean I have their greatest hits cd on my iPod, but it's not quite the same as owning the cd itself. And now I have one! Thanks Merced! That version of "Lovin', Touchin', Squeezin'" is my new favorite!
My birthday was ok. It was nice and small. Quaint. Overall, good.

So sorry about the long post, again! But it happens, especially when you don't blog for several days. I am going to try and blog every other day or so. Promise!

My excuse ...

I had quite the record in 2009. Didn't get a major cold once. Not once! And what happens at the turn of the new year?? I get a cold! lol. Right now it's just mild - cough, sore throat, congestion and sneezing. But man do I hate the sore throats! Ooooh and the watery eyes. I think though, on that part I'm just pretty tired.

I really haven't been up to much lately. Not at all. It's kinda quiet and boring on my end. Just work, work, work, bills - shower, rinse and repeat!

Although my birthday is coming up! In a matter of days! 4 days to be exact! :) It's weird though, because it doesn't feel like my birthday, not one bit. I don't even feel slightly spontaneously excited. I have to make myself feel excited. It's only 22 ... makes sense right?

But really that is my excuse for lack of blogging, the sickies.

I came home from the grocery store and unloaded a bunch of veggies into the dutch oven and made a veggie soup with some proscuitto. It was pretty good! Now the only downside is there's a crapload left! I kid you not. I've already filled 4 salsa jars with leftovers and there's still some inside the dutch oven! I don't know what I'm gonna do with the rest, it would kill me to throw it out.

I've already got an idea for the next blog post I wanna put up, so it won't be too long from now before I'm back!
